The Abridged version:

  • Yusuf Topal, the owner of Jayna Gyro, and his brother Levent are opening JEYAS Café & Pâtisserie in Midtown Sacramento’s Ice Blocks development.
  • Sacramento-born chef Antonio Coriano, who worked at Michelin-starred Protégé in Palo Alto, will run the pastry program.
  • The café is aiming to open in late spring 2027, with planned hours from 6:30 a.m. to midnight.

JEYAS Café & Pâtisserie will open in the Ice Blocks in late spring 2027, taking over the former Pressed Juicery storefront and the Midtown Sacramento development’s leasing office next door.

The project comes from Yusuf Topal, who owns Jayna Gyro in East Sacramento, and his brother Levent Topal. The brothers are building an all-day café around a European-style pastry program led by Sacramento-born chef Antonio Coriano, with Levent overseeing daily operations.

The menu will include specialty croissants and other pastries, desserts and sweet and savory French-style crêpes, along with sandwiches, specialty coffee, smoothies and açaí bowls.

“I have admired and been a customer of Jayna Gyro for a long time,” Ice Blocks developer Michael Heller said in an email. “The food is authentic and really tasty. So when the operator Yusuf Topal expressed interest in the Ice Blocks, I got really excited.”

The hours set JEYAS apart from the usual café model. Doors are slated to open at 6:30 a.m. and stay open until midnight, with coffee and pastries in the morning and desserts late into the night.

The space will have seating indoors and out. More details on the menu, interior design and grand opening will come as the project moves forward, according to the announcement.

“Whether you’re an early riser looking for your first cup of coffee and a fresh croissant,” Yusuf Topal said in a statement, “meeting friends for breakfast or lunch, or satisfying a late-night dessert craving, we want JEYAS to be the place you think of.”

Those croissants and late-night desserts will come from Coriano, who has more than a decade of culinary experience. Locally, he has held roles as executive pastry chef at Old Soul Co. and lead macaron baker at Ginger Elizabeth Chocolates, according to a news release.

Beyond Sacramento, Coriano spent time as a pastry chef de partie at Michelin-starred Protégé in Palo Alto. He worked at Protégé until June 2026, then joined Pistachio & Cream, an Italian-style dessert shop in Midtown.

JEYAS is the latest Sacramento project for Yusuf Topal, who has worked in hospitality for more than 30 years. In addition to Jayna Gyro, he has operated Tarla Mediterranean Grill in Napa and Cellar, the restaurant at The Jacquelyn private social club in Midtown.

His brother Levent brings his own years in the hospitality industry to the partnership. Family shaped the café’s name as well, which blends the names of Yusuf’s three daughters: Jeyda, Yasemin and Ashley.

“Ice Blocks is the perfect location for this concept,” Yusuf Topal said. “We look forward to becoming part of this vibrant neighborhood and creating a place that becomes part of Sacramento’s everyday life.”
